A Small Sweet Treat With Coffee

In Dijon, Beaune and Dole (where we were in Burgundy recently), and occasionally in Paris, they always give you a little sweet snack with tea or coffee—sometimes a little ginger biscuit, or a little galette biscuit, sometimes a single chocolate, and once a toffee.

The most unusual was at a bistrot, le Gustalin in Dole, where we got a homemade marshmallow (guimauve)—made by the chef in situ and flavored with bergamot (orange). He came out to explain to us and we did buy a small packet to take home. The best marshmallows we’ve ever had, not too sweet and no corn syrup or preservatives.
